Q:

Why can't propellers have one blade?

A:

Propellers can have one blade. Normally a single-blade prop would only generate thrust on one side of the plane as it revolves, causing the engine to move violently in its mount as it spins, creating an unequal balance of thrust. One-blade propellers can work, they just require an equal weight on the opposite side of the blade, like the one in this photo.
