Is it weight or gravity that pulls the airplane down?

Both words describe the same thing. Weight is the mass of an object times the gravitational force of the system the object is on or near. Mass never changes, even in space, but one can be weightless if they have no gravity acting on them. Simply, the force of gravity is a part of weight, meaning both can be used to describe the force pulling down an airplane.
